Rocket Cake Birthday Morning Tea

Last week I shared with you my intentions to bake and decorate a Rocket Cake for my son, who turned 3 a few weeks back. Well I’m happy to report It actually happened. And it was awesome. By my own less-than-modest standards anyway.

Back in July, my husband’s grandma turned 80. She’s a pretty awesome lady, and we were a little stumped with to what gift to buy her. My Mother in Law was busy preparing a butterfly themed party for her so I offered to make a cascading butterfly cake. Gift and cake in one. Ripper.

A babushka inspired baby shower high tea

Let him eat cake

My dad turned 60 last week. I didn’t have a lot of time to make a cake so I cheated and went to my trusty (seriously!) Greens packet mix. Dad has type 2 diabetes so I didn’t want to contribute to his sugar intake with icing. I whisked a tablespoon of splenda with a small tub of marscapone cream and put an even layer on the half cake followed by a layer of chopped strawberries.
